This delicious wrap is my emergency “fast-food” lunch when I need something quick and easy that requires zero cooking, chopping or prepping. Super convenient for on-the-go or to bring to work!

4-Ingredients:

*Since the ingredients are all pre-made and store bought, I’ve tried to find the best minimally processed, all-natural products to make sure this “fast food” lunch is still healthy and nutritious! All great staples to always have stored in your kitchen. Below brands are some good options:

  1. Whole Wheat Tortilla Wrap: I look for wraps that contain minimal ingredients. My favorite are: Mission Carb Balance Super Soft tacos (whole wheat), Food For Life Sprouted Tortillas , and La Tortilla Factory.

2. Fresh salsa from your local supermarket - The fresh ones are always best because they usually contain just a few all-natural ingredients and no oils.

3. Organic, low sodium refried black beans.

4. Organic Corn: Frozen or canned work. Organic and low sodium is always best.

5. Optional: Crushed red pepper.

Layer:

  1. Lay the tortilla on a flat surface (If it’s coming out of the refrigerator and a bit hard, microwave for 10-12 secs to soften in, especially the sprouted ones).

  2. Spread a layer of the refried beans over the tortilla.

  3. Then place organic corn (u can microwave the corn for 90 seconds if using frozen).

  4. Top with Salsa. (and finally crushed red pepper if using)

  5. Wrap your roll. Once wrapped, I roll it into a piece of paper towel and then again in sheet of tin foil so it’s easy to bring on the go!
