Peanut Butter-Chocolate Chunk-Banana Walnut Bread, anyone?

Because really, what better combo of flavors are there? This is my go-to dessert and the Best. Thing. I. Ever. Made. It’s 100% Plant Based, dairy-free with zero added sugars or oils! Every ingredient is a natural whole food, making it a healthy dessert that I am eager to give to my kids (and beyond eager to eat myself)! It’s also really fun to make altogether with the family and since this “cake” is dad’s absolute favorite, we surprised him with it for Father’s day. The only problem is how fast the kids and I devour it!

Ingredients

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine the apple cider vinegar with the almond milk, set aside & let it curdle for 5min.
  3. In a large bowl, combine dry ingredients: whole wheat pastry flour, baking powder, baking soda, cinnamon and pink salt. Mix.
  4. In a separate bowl, combine wet ingredients: mashed bananas, peanut butter, vanilla extract, curdled almond milk. Mix.
  5. Pour mixed wet ingredients into the dry-ingredient bowl and mix altogether, adding 1 TBS water.
  6. Stir in the chocolate chunks and chopped walnuts.
  7. Pour batter into loaf pan and bake for 45 minutes (use a toothpick to make sure it comes out clean).
  8. Let it cool a few hours (the longer the better). Ideally would be 5-6 hours or prepare it the night before and let it cool down on your counter.
  9. Repeat guilt-free as often as you like.
