Three-Ingredient Apple Pancakes

Apple Pancakes are one of my favorite easy breakfast options. And not just because they’re extremely easy to make! They’re also a nutritious, balanced way to start out the day, with a lightly sweet flavor that everyone loves.

A Family Favorite

One thing that’s great about this recipe is that it’s something even picky eaters can love. And you know, it’s not only children who are picky eaters! Some of us adults also struggle with actually enjoying the foods that we know are good for us. Whether you have textural aversions or just prefer certain tastes, embracing a whole-food diet can just be challenging, no matter your age.

So when I find a recipe that’s really simple, easy to make, and uses ingredients that are well-liked and tolerated by even the pickiest of eaters, I’m happy! It’s great to have this kind of breakfast option up your sleeve.

A Three-Ingredient Breakfast

For this recipe, the ingredients are super simple, and easy to remember because of the 1:1:1 ratio. Just use one of everything, and make as many or as few servings as you need.

To make apple pancakes, all you need are:

  • Apples: I think sweet apples like Honeycrisp or Red Delicious make the best pancakes. They have a light texture and the right flavor. Green apples like Granny Smith are just bit too sour.

  • Eggs: For each apple, you’ll need one whole egg.

  • Flour: One tablespoon of whole wheat flour per apple/egg finishes off the recipe and helps create the pancake texture.

How to Make the Apple Pancakes

Making these pancakes is very easy, and if you’re using a griddle or large pan, you can easily whip up a batch for the whole family in very little time.

  1. Shred the Apple(s). First, you need to shred up your apples. You can use a box grater, mandolin with shredding insert, potato shredder, or what-have-you. I think a thicker shred works better than fine shreds.

  2. Combine the Ingredients. Whisk together the egg and flour, and then add in the shredded apple. Stir well to combine.

  3. Fry the Pancakes. Heat up a tablespoon of olive oil (or your preferred oil) in a large pan over medium heat. Drop the batter by large spoonfuls into the pan, and fry until golden-brown and crispy on both sides. 

  4. Enjoy!

  • Using apples as the base for this pancake recipe gives the dish a light, tasty sweetness with no additional sugar or syrup needed. Plus, the apples contain important micronutrients and healthy fiber. 

  • Eggs do their part by bringing healthy fat and protein, both so important for your body (and especially for growing kiddos).

  • The whole wheat flour satisfies our need for carbs, and gives kids the energy they need to do their kid craziness!

  1. Shred the apple
  2. Combine all 3 ingredients into bowl and mix
  3. Heat up skillet medium heat with 1/2 tablespoon olive oil (or your preferred oil)
  4. Fry the pancakes: Drop the batter by large spoonfuls into the pan, and fry until golden-brown and crispy on both sides (approximately 3 mins on each side).
  5. Serve and enjoy!
